Hi everyone, welcome back! This sticky BBQ glaze has a brown sugar Carmel. Its perfect on satin, tofu & burgers or anything you want BBQ sauce on. The brown sugar Carmel will give this sauce depth of flavor and a sticky consistency. Combined with spices and aromatics this glaze is balanced and well rounded.

Ingredient List:

  • 1 medium yellow onion small dice

  • 3 cloves garlic minced

  • 1/2 cup mollasses

  • 1/4 cup brown sugar

  • 2 tablespoons apple cider vinegar

  • 1 teaspoon ground ginger

  • 1 tablespoon liquid smoke

  • 1 tablespoon tomato paste

  • 1 teaspoon chili powder

  • 1 teaspoon cayenne pepper

  • 2 tablespoon djon mustard

  • 1/2 cup ketchup

  • 1/4 cup rum

  • 1/2 teaspoon ground cinnamon

  • 1 tablespoon soy sauce

  • salt & pepper to taste

Start by chopping onion and garlic. Next add oil to a medium size sauce pan. Turn heat to medium low and add onions & garlic. Cook until onions and garlic are golden brown. Next add brown sugar and let caramelize for 8 minutes until darken in color. Next deglaze with rum or water. Stirring caramel until alcohol is cooked off and brown bits are unstuck.

Next were going to add the remaining ingredients to sauce pot and simmer on medium low heat for 20 minutes so the flavors combine and sauce reduces. Once done let cool and refrigerate for up to 1 week or freeze.
