Miso Glazed Salmon

This Miso glazed salmon is a super easy & delicious dish to make that is perfect for a weeknight meal. The miso paste gives the salmon so much umami flavor and along with some sake and rice vinegar, you will have a tasty fish that cooks in less than 10 minutes. I prepared a side of refreshing corn and squash succotash to contrast texture and bring out the sweetness of the fish. This dish is super healthy and it can be prepared ahead of time. Marinade the salmon the night before or keep it marinating for up to 4 days in the refrigerator. This dish is perfect for meal prep.






Ingredient List: Miso Marinade Yield: 1 lb Salmon

  • 2 Tbsp Miso Paste

  • 2 Tbsp Sake/Mirin

  • 1 Tbsp Sugar

  • 1 Tbsp Soy Sauce

  • 1 Tbsp Rice Vinegar

Ingredient List: Corn Succotash

  • 2 corn (kernels removed)

  • 1 red bell pepper (medium dice)

  • 1 zucchini (medium dice)

  • 1 squash (medium dice)

  • Salt & Pepper to taste


Step by Step instructions:


First in a large mixing bowl add 2 tbsp miso, 1 tbsp rice vinegar, 1 tbsp soy sauce, 1 tbsp sugar and 2 tbsp sake. Give it a good mix using a whisk to break apart miso and combine well.





Once you are done cut the salmon into a portion size that you like. Place skin side up, cover with plastic wrap and marinade in the refrigerator for up to 4 days. You should marinade the salmon for at least 4 hours.





To prep the veggies all you need to do is give the squash, red bell pepper, and zucchini a medium dice. Next remove the kernels from the corn. I do this by cutting the end off the corn so you have a flat surface to stand the corn on. Then place corn on a flat surface and slice downwards removing the kernels. I slice the corn into a bowl so it catches the kernels.




Cooking directions for salmon goes as follows: You can either bake salmon in the oven at 400 degrees for 8-10 minutes until desired doneness.


Or you can use a heavy bottom sauté pan on medium heat and sear salmon.

Place 2 Tbsp olive oil in a pan. Let the oil get hot and place the salmon skin side down and cook for 2-3 minutes. Then flip salmon and turn off the heat. I let it finish cooking in the pan using the residual heat for 5 minutes or until desired doneness. I cook my salmon until it's medium rare.




I like to plate the succotash first and then place the salmon on top. You can add some red onion, garlic and fresh thyme to the veggies if you like. I try to make these recipes simple but delicious but you can always elaborate on them if you are more of a foodie.


You can also switch out the veggies if you like. Some sautéd spinach with garlic and lemon would be great. The miso glazed salmon would also pair really well with creamy mashed potatoes. Have fun and experiment. That is what cooking is all about.
