Shrimp Pomodoro

This quick & easy weeknight pasta is fun and delicious to make and eat. The garlic and shallots flavor this dish and give complexity to the tomatoes. The use of broccoli and shrimp make this dish a healthy choice for any day of the week.




Ingredient List: Yield 4 people

  • 3 cups roma tomatoes (medium dice)

  • 4 cloves garlic (sliced thin)

  • 1 large shallot (minced)

  • 1/2 shrimp peeled and deveined

  • 1/4 cup white wine

  • 2 tablespoons butter

  • 2 tablespoons olive oil

  • 1/2 fresh basil

  • 1/4 cup heavy cream

  • 2 cups broccoli florets

  • 1 tablespoon lemon juice

  • 1/2 cup dried pasta of choice

Step by Step instructions:


Start by thinly slicing 4 cloves of garlic. Next chop 1 large shallot into a small dice. Then chop the Roma tomatoes into a medium dice.



Next chop the broccoli into bite size florets.



In a large sauce pan on medium heat add 2 tablespoons olive oil. Once the oil is hot, add the broccoli florets and cook for 6 minutes until they develop some color. Make sure to season with some salt & pepper.


Once cooked, deglaze the pan with 1/4 cup white wine. Then remove the broccoli from pan and set aside for later.



In a large saute pan on medium heat add 2 tablespoons of butter, garlic and shallots.


Cook garlic and shallots for 5 minutes until they develop some color. Sprinkle some salt on them while they are cooking as well it will help break them down and also season the dish.



Once the shallots and garlic have some color add 3 cups of diced roma tomatoes and some salt & pepper. Cook the tomatoes on medium heat for 10 minutes. Make sure to stir frequently so tomatoes won't stick to pan and burn.



Once the tomatoes have cooked down and reduced, it's time to add 1/2 cup shrimp, 1 tablespoon lemon juice and some salt, pepper & give it a stir.

Next add 1/4 cup of cream. Once cream comes to a simmer, add broccoli florets & 1/2 cup of freshly torn basil. Turn off the heat now. The residual heat will finish cooking the shrimp and will heat through the broccoli.



Once your pasta is finished cooking, add to sauce and give it a good toss to combine all of those delicious flavors.



Time to plate!! This dish is great just the way it is but you can also elaborate on it. For instance some capers or olives would be a great addition. You can even add some parmesan if you like cheese with fish. Have fun and experiment. That's what cooking is all about.
