Hi everyone, welcome back! This okra curry which is called (bhindi masala) in hindi, is flavored by a tomato base with lots of spices. The curry is stewed in its own flavors & spices which develop a rich warming sensation when eaten. Best served with jasmine rice and a side of lentil curry (dal).

Ingredient List:
1 medium red onion small dice
12oz chopped okra
1 tablespoon tomato paste
3 clove sticks
1 tablespoon garam masala
6 cloves garlic minced
1 teaspoon cayenne pepper
2 tablespoon cumin/coriander powder
1 teaspoons turmeric powder
2 roma tomatoes (medium dice)
2 cups water/veggie stock
salt & pepper to taste
Step by Step instructions:
Take a large sauce pan & put it on medium low heat and add 2 tablespoons of oil to it. Once the oil is hot, add the spices: cloves, bayleaf, and cumin/coriander powder.
After the spices become fragrant and are slightly toasted, add the onion & minced garlic season with some salt to help onions brown. Cook on medium low heat until lightly golden brown about 10 minutes.
Add tomato paste and cook for 5 minutes. Next add the tomatoes and season with some salt & cook until tomatoes are soft about 10 minutes.
Next wash & chop okra so its 1/4 rounds. Then add okra to pan along with turmeric, garam masala & cayenne pepper toss to combine & season with salt & pepper.
Add veggie stock/water, cover and reduce heat to low and simmer for 30 minutes. After cooking for 30 minutes remove lid and check for doneness & seasoning.
Once okra is done remove from heat and plate and garnish with freshly chopped cilantro.
