I'm so excited to share this creamy dal tadka aka lentil soup with you guys. It's packed with tons of flavor from aromatics and spices. I made this in an instant pot today and it's one of the easiest recipes to follow. This dal is so great to serve with rice and curries of any kind. It just complements everything so well and is easy to make for a quick weeknight recipe or meal prepping.

Ingredient List:
1 large onion small dice
2 teaspoons cumin seeds
5 clove sticks
2 dried red chilies
6 cloves garlic minced
4 whole bay leaves
2 teaspoons dried turmeric powder
2 vine ripen tomatoes medium dice
2 teaspoons hing powder
6 cups water
1 cup yellow and red Dahl mixed 1/2 of each
Cilantro for garnish rough chop
2 tablespoons salt
1 tablespoons black pepper
Step by Step instructions:
In a Instant pot on sauté function (normal) add: 2 tablespoons of oil.
Let it heat up and then add the spices: cumin, cloves, bay leaves & red chilies.
Toast spices until fragrant.
Next add onions & garlic and cook until golden brown.
Next add turmeric & tomatoes and cook for 10 minutes while continually stirring and making sure aromatics are not burning. It's ok to see the aromatics sticking to the bottom of the pot and getting golden. We will deglaze with water to unstick all of that great flavor next.
Next add 6 cups of water and scrape bottom of pot with a wooden spoon to release any ingredients that are stuck to the pot.
Next add lentil mixture, hing powder, salt and pepper to taste.
Set instant pot to pressure cook on high for 30 minutes.
