Fried Vegetable Sushi Roll

Hi everyone, welcome back. This crispy and umami packed roll will satisfy your taste buds with each bite. The batter on these veggies will stay crispy until the last bite. This delicious fried vegetable roll is paired with some creamy avocados to go along with the crispy textures and mango for some sweetness.





Ingredient List:

  • 2 portobello mushrooms sliced 1/4inch thick

  • 2 pc avocado sliced 1/4inch thick

  • 1 pc asparagus

  • 1 sweet potato sliced 1/4inch thick

  • 2 slices of mango sliced 1/4inch thick

  • rice flour batter (link here)

Step by Step instructions:


After preparing the vegetables & rice flour batter, lightly coat the vegetable on both sides shaking off any excess batter.


Next using a fryer or a heavy bottom pan/pot, bring your oil temperature to 350 degrees.


Start frying the vegetables and once they turn golden brown, remove from fryer and place onto a tray lined with paper towel and season with a little salt. Alternatively you can place on a baking tray with a wire rack and let the oil drain.






First take your bamboo rolling mat and place your nori sheet on top. Then add about 1/2 cup of rice and spread it evenly over the nori sheet. Sprinkle some toasted sesame seeds on top of rice.


To assemble the roll place the asparagus on the rice. Next add mushrooms below the asparagus & place sweet potato below the mushroom. Then place avocado and mango on top of veggies.


Take your bamboo rolling mat & roll forward while pressing down and squeezing inward. Repeat until roll is cylindrical.


Cut into 8-10 slices drizzle with optional spicy mayo or unagi sauce.
