Ultimate Vegan Huevos Rancheros

Hi everyone, welcome back!


Back when I lived in New York and went to brunch quite often, I would order Huevos Ranchero as my go to brunch meal. I love the combination of salty tortilla chips paired with the spicy, sweet, savoy ranchero sauce. It is topped with avocado & sunny up eggs and fresh cilantro. Yum!! This recipe gives you all of that except for the sunny egg. I'm using just egg and it does the job as a substitute really well. You can also add some vegan cheese if you like.





Ingredients List: yield 12 corn tortillas

  • 4 corn tortillas

  • 1/3 bottle Just Egg

  • 1/2 avocado (sliced)

  • Black teaspoon

  • Pepper to taste

  • Re Fried beans (see blog post)

  • Ranchero sauce (see blog post)

Step by Step instructions:


First start by cooking the just egg. I use a silicone muffin tray. I find this to be the best method because it is easy and you can also cook all the eggs for the week and meal prep it.

There is no need for extra oil or butter. Just pour the egg in the muffin tray and add some black salt & pepper.

Put in a pre heated oven at 400 degrees for 12-15 minutes depending on how done you like your eggs. You can even add cheese to them as well.




While the eggs are cooking, let's start frying the tortillas.

BTW you can also buy these fried already if you don't wanna bother with frying them but I recommend frying fresh corn tortillas if you can.


If frying use a heavy bottom sauce pan or cast iron skillet and heat oil to 375 degrees. Fry tortillas for about 30 seconds on each side and then remove and drain on paper towel & season with salt.


Now it's time to assemble the huevos rancheros.

Take the re fried beans and spread them on the tortillas. Next break up the egg and layer on top of the black beans.

Next add either sliced avocado or avocado mash. It's up to you. Season avocado with some salt, pepper and a squeeze of lime.



Now it's time to top the eggs with the ranchero sauce. Put as much as you like according to your taste. Garnish with some freshly chopped cilantro and you have a breakfast fit for a King/Queen.


I hope you had fun making this dish. If you make enough sauce and beans, this is a great dish to meal prep and have it a few times a week. I always make enough to have extras for a few days and my girlfriend is always pleased when I do. This recipe should be enough to have for at least 3 meals for 2 people, so 6 meals total.
