Today we will be making an easy to make pasta that is perfect for a weeknight meal with only 5 ingredients that is creamy, delicious & full of flavor.
Ingredients List: Pink Sauce Yield 1lb Pasta
1 can peeled plum tomatoes
6 cloves garlic minced
2 tablespoons heavy cream
1/4 cup ricotta cheese
2 shallots minced
2 tablespoons extra virgin olive oil
1 teaspoons sugar (depending on how sweet you like your sauce)
1 teaspoon Salt
1/2 teaspoon fresh cracked black pepper
Step By Step Instructions: Pink Sauce
Start by peeling 6 cloves of garlic and mincing them. Next peel and chop shallots on a medium dice. Then grab a medium size sauce pot and put 2 tablespoons extra virgin olive into the pan.
Add 6 cloves of garlic & 2 shallots to the sauce pot on medium low heat. Cook for 6 minutes until garlic has a nice golden brown color.
Next add the can of tomatoes to the pot. Season with salt, pepper, sugar and bring to a simmer. Cook on low heat it should just be a gentle simmering for 35 minutes.
While the sauce is simmering and has about 5 minutes left of cooking, in a large pot add water and salt for the pasta and bring to a boil.
After the sauce simmers for 35 minutes, remove from heat and add 2 tablespoons heavy cream & 1/4 cup ricotta cheese. Give it a mix then add to a blender and blend until creamy and smooth.
Now the sauce is ready for the pasta. Cook pasta according to the directions and strain.
Next dump the sauce back into the the pot you cooked the pasta in. Put pot back on the hot burner, add the pasta & the sauce to the pot and toss for 2 minutes to incorporate the sauce.
The pasta is now finished. Feel free to add some fresh basil and some parmesan cheese if you have it. If you don't, that's fine. This pasta is amazing without it too.
