Thick & Crispy Rice Flour Batter

Hi everyone. This is my go to batter for frying vegetables. This batter will form a solid crust that will remain crispy for a long time after frying. It will also hold up to sauces and is great inside sushi rolls.





Ingredient List:

  • 1 cup all purpose flour

  • 2 tablespoons rice flour

  • 1 tablespoon baking powder

  • 1 cup ice water

  • 1/2 teaspoon salt




Step by Step Instructions:


Measure out 1 cup of water and leave it in the freezer for 15 minutes until it's ice cold.


Next in a large mixing bowl add all ingredients and combine well.


Once water is ice cold, add to the flour mixture. Fold to incorporate, do not over mix. Let the batter sit for 5 minutes before using.


Batter should be kept in fridge if not ready to be used right away.
